According to an interview with director John McTiernan, the "hole in the jungle" appearance of the Predator was played by Jean-Claude Van Damme in a "blue screen" (actually red) suit. Van Damme quit after two days, unhappy with being cast as an uncredited special effect. The alien was scrapped, redesigned and was eventually played by 7'2" Kevin Peter Hall.
An attempt was made to get shots of the Predator swinging from tree to tree using a monkey in a red special-effects suit. However, the monkey kept removing the suit and the idea was abandoned.
The mandibles of the predator were the idea of James Cameron.
Most of film was shot under the original title "Hunter", it was only later when the creature design was changed that the movie became "Predator". The clapperboards showing the original title can be seen in the outtakes on the special edition DVD.
The original "Hunter" model was a large creature with a long neck, a head shaped like a dog and one big eye in the middle. This can be seen on the camouflage demo's on the DVD. It was only when Stan Winston moved in that the complete design of the now "Predator" changed, along with the title.
Two waterfalls are used in the climax of the movie, both near Palenque in Mexico. The first is Misol Ha, just outside the village (beginning and end of the sequence), and the other is Agua Azul about an hour's drive away (the middle part of the sequence).
The black helicopter pilot seen at the end of the movie is Kevin Peter Hall, the actor who plays the Predator.
The original concept for this film originated as a joke. Someone said that the only person Rocky Balboa of the Rocky series of films had yet to fight was E.T. The Extra-Terrestrial.
Two of the actors portraying commandos besieged by the Predator have been elected to state governorships: Jesse Ventura (Independent) was elected Governor of Minnesota in 1998, and Arnold Schwarzenegger (Republican) was elected Governor of California in a hotly-contested recall election in 2003. In addition, Sonny Landham (Republican) ran an unsuccessful campaign for Governor of Kentucky in 2003.
The weapon that Blain (Jesse Ventura) is using is a minigun. This is a weapon most commonly mounted on the side of a helicopter (or an aircraft carrier) and many, many modifications had to be made to make it usable in the film. It was powered via an electrical cable hidden down the front of Blain's trousers. The firing rate was slowed down to approximately 1/3rd the normal rate of fire, both to reduce consumption of blanks, and to make the spinning of the barrels visible on film. It is rumored that Ventura had to wear a bulletproof vest because of the forceful ejection of spent cartridges, but this is false. Unmodified miniguns eject out of the bottom, with the cases essentially falling out due to the force of gravity. Close examination of the film (especially the scene in which Mac fires the minigun at the fleeing predator, along with the other commandos) show that the ejection of the minigun was not changed.
The studio would not allow John McTiernan to shoot this film in anamorphic widescreen due to the complexities of the optical effects. As a sly sort of retaliation, the director added an anamorphic version of the film's opening 20th Century Fox logo, which looks noticeably stretched on screen.
Sonny Landham was hired to work on this film, but on one condition: the insurance company insisted on a round-the-clock bodyguard for Landham, not to protect the actor, but to protect everyone else from the actor (who was prone to bar fights, etc.)
Shane Black, who plays commando Hawkins, is actually a writer. The producer wanted Black to watch over John McTiernan, whose first studio film this was.
The director didn't get sick while on location in Mexico, because he refused to eat. As a result, he lost 25 pounds.
The director broke his wrist while on location, but kept working.
John McTiernan admitted that actor R.G. Armstrong was too old for his part, but kept Armstrong simply because he liked him. Added to this, the actor wore "too much" tanning makeup to hide his age somewhat.
The predator's blood - a goopy substance with the color of Mountain Dew - was made on-set using a mixture of the liquid from inside glow sticks, and KY jelly.
Due to health and safety regulations, Arnold Schwarzenegger was not allowed to light his cigar inside the helicopter near the beginning of the film. As a result the glow was added optically in post-production.
Jesse Ventura was delighted to find out from the wardrobe department that his arms were 1" bigger than Arnold Schwarzenegger's. He suggested to Schwarzenegger that they measure arms, with the winner getting a bottle of champagne. Ventura lost because Schwarzenegger had told the wardrobe department to tell Ventura that his arms were bigger.
During the closing credits, Shane Black is seen prominently displaying a copy of Sgt. Rock #408 (Feb. 1986). In the DVD commentary, John McTiernan notes that at the time, Arnold Schwarzenegger had an adaptation of Sgt. Rock in production, and that's why the comics were on set, so he could read them. He described the scene where Dutch (Schwarzenegger) walks up to Billy (Sonny Landham), who senses the Predator's presence out in the bush, as a "Sgt. Rock moment".
Arnold Schwarzenegger lost over 25 pounds before filming began in order to better fit the role of a special warfare operative, who would be lean as well as muscular.
All of the actors are wearing Vietnam surplus canvas load bearing gear, not the more modern (i.e. post 1967) nylon gear.
The sidearms carried by the troopers are Desert Eagle handguns.
Cameo: [Sven-Ole Thorsen] Arnold Schwarzenegger's friend and frequent collaborator appears as the Russian Officer.
The minigun that Blain (Jesse Ventura) carries fired at such a high rate that it could not be filmed. The weapon had to be slowed down so that the barrel could be seen rotating on camera.
Acting debut for both Jesse Ventura and Shane Black.
Third film in which Arnold Schwarzenegger wears a Seiko model H558-5009 diver's watch. Since nicknamed "The Arnold", it is highly sought-after by collectors and regularly trades for values in excess of its original retail cost. Its distinctive black collar and stainless steel fittings suitably complements Schwarzenegger's exaggerated arm muscles in his early films.

[Dillon comes over and sees Mac motion to the trees]

[Mac takes a blade puts it on Dillon's back, Dillon spins around, his gun aimed but then sees a scorpion on the end of the blade] Thanks!

[shouting to Anna] Get to the chopper!
Blain:
This place makes Cambodia look like Kansas...
Poncho:
[Seeing Blain has been shot] Your hit man, your bleedin'.
Blain:
I ain't go time to bleed.
Hawkins:
Billy. Billy! The other day, I was going down on my girlfriend, I said to her, "Jeez you got a big pussy. Jeez you got a big pussy." She said, "Why did you say that twice?" I said, "I didn't."

[directing his team into the jungle] We move, five meter spread, no sound.

Hey Billy. Billy! The other day, I went up to my girlfriend, I said, "Y'know I'd like a little pussy". She said, "Me too, mine's as big as a house!"
[Billy stares blankly]
Hawkins:
See, she, she wanted a little one 'cause hers was...
[Hawkins pauses, then trails off]
Hawkins:
... big as a house.
Poncho:
Not a thing. Not a fucking trace. No blood, no bodies... We hit nothing!
Dillon:
[after a trap seemingly fails to attract the predator] So, what are you gonna try next? Cheese?
Dillon:
That's a real nasty habit you got there.
Anna:
When I was little, we found a man. He looked like - like, butchered. The old woman in the village crossed themselves... and whispered crazy things, strange things. "El Diablo cazador de hombres." Only in the hottest years this happens. And this year, it grows hot. We begin finding our men. We found them sometimes without their skins... and sometimes much, much worse. "El cazador trofeo de los hombres" means the demon who makes trophies of men.
Dutch:

Poncho:
[Mac has just stabbed a boar to death, thinking it was the Predator] Gee, you think you could've found something bigger?

Continuity: Orientation of the scorpion when Mac crushes it with his boot.
Incorrectly regarded as goofs: The object visible under the log while Mac and the major are hiding there, which looked like a microphone to some, has been identified as the ends of two guns.
Continuity: The bloodstains on Anna's face after Hawkins is killed.
Miscellaneous: Hawkins walks away from the camera just after he was killed.
Continuity: After the scene where the whole team embarks on a shooting spree into the jungle (after Blain's death), Dillon gets on the radio to ask for help "Blazer one I repeat extraction necessary, say again blazer one, say again!" The first shot shows Dillon facing in Anna and Poncho's direction. When the camera zooms in for the next shot, Dillon is facing away from Anna and Poncho.
Continuity: The cable wraps tying Anna's wrists.
Incorrectly regarded as goofs: Anna swings a branch at the right side of Poncho's head, but he turns before the impact, which is why he bleeds from the left.
Continuity: After removing his space helmet, the Predator screams at Dutch. Seconds later, while chasing Dutch, the Predator roars at him, and the same footage of the Predator's screaming is used.
Audio/visual unsynchronized: When Anna hits Poncho and runs away, Dutch points and "whistles" at Hawkins ordering him to chase Anna. But when the whistling noise is heard Dutch's mouth is closed.
Revealing mistakes: After the predator shoots Blain through the chest and Mac rolls Blain over, you can see the undershirt the actor is wearing under the fake wound.
Audio/visual unsynchronized: When Anna sneaks up on Dutch from behind in the rebel camp, he turns around at the sound of a pistol being cocked, when she is merely holding the gun.

Continuity: In the original uncut version, when Major George Dillon has his right arm shot off, the camera pans around his back and you can see his right hand poking out under his shirt, in the next shot his hand is not there.
Continuity: Billy has a M16 with a shotgun attached to it. In the scene right after they leave the rebel camp you can see Billy with a "normal" M16 without an attached shotgun. One moment later he has his own rifle back again..
Revealing mistakes: After Anne runs away from Dillon and is caught, Dillon lifts her up and her hands are in front of her "bound" together. One of the zipties that is supposed to be around her wrist is hanging loose and her hands are clearly no longer bound, although she holds them together as if they were.
Continuity: In the final battle scene, before the Predator takes off his mask, Dutch can be seen leaning back against a tree; from the Predator's view, he is standing in the clearing, hunched over in a ready position.
Continuity: Dutch lights an explosive and tosses it at the Predator. When it explodes, Dutch runs and jumps on a branch. In the first shot with the branch, it has a curved end. When Dutch grabs onto the branch in the next shot the branch has no curved end.
Crew or equipment visible: In the pan-and-scan version, when Billy first finds the bodies of the skinned green berets, he is startled by the vultures as they fly away. In a quick overhead shot, a camera can clearly be seen below him.

Continuity: When Dutch catches the dog tags of Lt. Hopper, they hang off the side of his hand. In the following shot (from Dutch's point of view) they are sitting nicely in his palm. It then cuts back to the full body shot of Dutch and they are hanging off the side of his hand again.
Continuity: The snake that crawls down towards the guys is slithering down a metal pole when we see it in close-up, instead of the tree we see in the previous shot.
Revealing mistakes: When Dutch is about to lift the running truck off the logs, the rebel is obviously looking to his right waiting for the truck to come by so he can look surprised.

Revealing mistakes: When Mac removes the scorpion from Dillon's shoulder, a gray adhesive can be seen holding the scorpion when Mac holds up the knife.
Continuity: When Arnold is swinging through the trees trying to get the predator to follow him into the trap, there is a clip where he his hugging the tree and his hair is messy. There is a pan of the forest then back to Arnold but now his hair is all neat and tidy.
Audio/visual unsynchronized: When Poncho climbs the rope to check out the chopper, the hook on the rope's end is lifted by his clothes. When it drops back onto the chopper there is no metal sound.
Continuity: When Dutch is pinned to the log by the Predator's "fork" near the end, one can see that the fork has been widened to fit over Dutch's neck. In other shots involving the fork, it has the same width from base to tip.
Crew or equipment visible: When Poncho is hit with the log the Predator just shot, you can see the ramp that flings Poncho into the air right under him.
Factual errors: It is not possible to fire a mini gun, which Blain carries, without some power source, which he does not carry; the pack on his back only contains ammunition. Further more, if a human were to fire a mini gun with live ammunition, one would be propelled backwards by the recoil.
Audio/visual unsynchronized: When Dutch is running from the Predator, and trying to lead the beast into the small tunnel which contains the "trap", a quick cut-away shot of the trap mechanism appears to be a photo of the trap, as opposed to "live" footage, and even appears to be a bit out of focus.
Boom mike visible: When 'Dutch' and Major George Dillon are hiding from the Predator in the hole/trench the boom mike is visible.
Revealing mistakes: When Dutch falls down the waterfall, it is clearly a stunt double. The person falling down the waterfall has more hair than Arnold did in the movie.
Miscellaneous: When Blaine was shot in the back by the predator, the laser had to have ripped right through all the ammunition in his backpack. However, Mac picks up the mini gun and fires all the ammunition with no problem.
Revealing mistakes: As Dillon and Anna walk by Mac after the fight at the compound, a supposedly dead soldier can be see rolling his leg around. He's the one lying directly next to the barrel, and can only be seen before Mac takes the scorpion off of Dillon's back.
Continuity: At the beginning of the movie when Dutch asks Dillon who their reinforcements are you can clearly see Poncho sitting next to Dillon, but Poncho doesn't move next to Dillon until later when he tells Blaine to strap the grenade launcher on his sore ass.
Continuity: The length of Dutch's cigar changes drastically during the Jeep ride from the helicopter. Dutch is seen lighting the new Churchill sized cigar when the chopper lands, but when he walks up to the General, it is several inches shorter. That type of cigar takes a few hours to smoke, so the Jeep ride across the beach would have to be about 45 minutes long. Additionally, his cigar is shown to be even shorter in the next scene inside the General's HQ.
Revealing mistakes: During several scenes in the movie, permanent blank adapters can be seen in the muzzles of the various weapons carried by Dutch and his team. Most notably, the scene where Mac is walking through the bush with his M60 barrel pointed towards the camera, and another scene where Billy is shown emerging from the bush with the muzzle of his M16 pointed towards the camera. There should only be one hole at the end of the barrels of each weapon, but what can be seen is a small reversed cone shape inside the flash suppressor indicating permanently modified blank firing weapons.
Continuity: After Dutch swims to shore, he falls on the left side of his face. When he turns around to look at the Predator, we can see that the right side of his face is clean. A little later, after Dutch struggles into the brambles and turns around, his entire face is covered in mud.
Factual errors: One scene features prominently a reticulated python (Python reticulatus) moving on a tree's branch. The species is found in Southeast Asia rather than Central America.
Continuity: Predator shoots Mac in the head with the shoulder cannon (close-up with lots of blood) but when Dillon sees the body his head is OK.
Continuity: When Predator uses stealth camouflage, his hair completely vanishes.
